Peanut Butter & Honey Bars

This is the ultimate kids snack bar. It's also great for grown-ups who still get those peanut butter and honey cravings.

Be sure to use the best quality dark chocolate you can find.





Ingredients

  • • 3/4 cup liquid Pinecreek honey
  • • 1 cup natural peanut butter (smooth)
  • • 1/4 tsp salt (optional)
  • • 1 tsp vanilla
  • • 1 cup semi-sweet chocolate chips, or 150-175 gm. dark chocolate bar (minimum 60% cocoa content), broken then coarsely chopped
  • • 1 cup salted peanuts, halved or coarsely chopped
  • • 3 cups rice krispies
  • • 1 tbsp butter for greasing the pan


Directions

Grease an 8 x 11 inch pan (approximate) with butter, set aside.

In a large saucepan, melt honey and peanut butter over medium low to medium heat. Sprinkle in salt if using.
Cook to the point of just bubbling and well combined*.

*(NOTE: Reduce or remove from heat if the bottom of the saucepan browns-on too much. Continue stirring before returning to lower heat.)

Remove from heat, stir in the vanilla, and then blend in the remaining ingredients.

Press mixture into greased pan.
Cool in the fridge for at least 2 hours before cutting into bars.
Keeps best kept in an airtight container stored in a cool place or the refrigerator.

Makes enough for 12 to 15 kids.
